A cast-iron lesson from South Africa

The potjie is a three-legged, cast-iron pot that Dutch settlers brought to the Cape in the 1700s. Ever since, it has united South Africa’s richly diverse communities around open fires and braais (barbecues). Slow-cooked stews bubble away for hours while friends and families laugh, share stories, and—crucially—take turns tending the embers. Each September, National Braai Day sees entire neighbourhoods competing to create the tastiest potjie, from fragrant vegetarian curries to hearty seafood chowders.

But ask any potjie master, and they’ll tell you that delicious results demand patience and care. The fire must be coaxed, ingredients layered thoughtfully, and the pot watched so it never dries out or burns. Ignore it for a short while, and you’re left with a charred, empty shell—and a hungry crowd.
